Rich and velvety, the filling for this luscious cream pie is reminiscent of chocolate mouse. Top it off with fresh berries and home made whip cream.

Smooth and velvety chocolate filling topped with sweet whipped cream and fresh strawberries, this pie has it all.

Ice cold chocolate cream pie is a signature summer dessert. Top it with fresh seasonal berries and you have a pie dressed for a party, picnic or the perfect finale for a family dinner.

There are many recipes for chocolate pudding pie, most use the quick method of using no-cook instant pudding. Although these pies take less time to prepare they are not as rich as chocolate pie made with cooked pudding. It will take a little longer to prepare and cool this pie but the reward is in the texture and flavor and well worth the effort.

Chocolate Cream Pie with Berries:

Pie Crust :

Ingredients :

  • 1 cup flour
  • 1/8 tsp salt
  • 1/3 cup cold butter
  • 1/4 cup ice water

Method :

  1. Pre- heat oven to 325
  2. In a large bowl mix flour and salt
  3. Cut butter in with a pastry knife until
  4. Add in iced water a little at a time still cutting with pastry knife until dough will form a ball and pulls easily away from sides of bowl
  5. Place dough on lightly floured waxed paper and roll out to a circle large enough to fit a 9" pie pan (about 10" to 10 1/2 ")
  6. Remove dough from waxed paper and place it in pie pan
  7. Bake for 15 min
  8. Remove from oven and allow to cool completely

Pie Filling :

Ingredients :

  • 3 egg yolks (beaten till light yellow)
  • 1 cup sugar
  • 1/3 cup flour
  • 1/2 cup dark cocoa powder (Hershey's makes a special dark that works very well)
  • 1/4 tsp salt
  • 3 cups whole milk
  • 2 tbsp butter
  • 1/2 tsp vanilla extract

Method :

  1. In a medium saucepan stir milk, sugar, flour and cocoa; cook over med heat until mixture bubbles
  2. Continue to cook an additional 2 minutes stirring constantly
  3. Stir 1/2 tbsp hot mixture into egg yolks quickly to temper eggs
  4. Mix eggs into milk mixture in pan, stirring constantly for 1 min
  5. Remove from heat
  6. Add in butter and vanilla
  7. Pour pudding into baked pie shell
  8. Refrigerate for at least 2 hours before serving

Whipped Cream :

Ingredients :

  • 1/2 pint heavy whipping cream
  • 2 tbsp confectioners sugar
  • 1 tsp vanilla extract
  • Optional - 1 tbsp cocoa powder can be added for chocolate whipped cream

Method :

  1. In a med sized bowl (preferably metal with a narrow bottom) add all ingredients
  2. Mix on med high speed with a hand held or stand mixer until stiff peaks form (point form and don't fall over when the mixing blades are pulled from the cream)
  3. Cover and refrigerate until ready to use

Berries :

  1. To prepare berries lay out a sheet of paper towel
  2. Hull and wash berries
  3. Places strawberries upside down on paper towel to allow all of the water to drain from the inside
  4. Chill until ready to use

Raspberries and blueberries are also very good with chocolate pie or a combination of berries can be used.

When ready to serve simply pile whipped cream and berries on top of pie and serve. For a more formal presentation, whipped cream can be piped onto pie using a pastry bag.
